Salt is not just a seasoning ingredient in soy sauce. In light soya sauce, manufacturers said that reducing it too drastically could compromise fermentation, which is central to how the sauce is made.
Quality could fall if the recipe is altered too much
A major concern is that the sauce may no longer taste or perform like standard soy sauce if the sodium level is cut too far. Tay Choon Hong said manufacturers feared they might be forced to reduce the amount of soy, which could lead to a poorer quality soy sauce.
